  • 1 medium butternut squash, peeled, seeded, and cut into bite-sized cubes
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • Pinch of cinnamon
  • Pinch of nutmeg (optional)
  • Sprinkle of sea salt (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Peel the butternut squash, cut it in half lengthwise, and scoop out the seeds. Dice it into bite-sized cubes, about 1-inch pieces.
  3. In a medium bowl, combine melted butter, brown sugar, honey, cinnamon, and optional nutmeg and sea salt. Stir until smooth and well blended.
  4. Add the squash cubes to the bowl and toss until they’re evenly coated in the sweet, buttery mixture.
  5. Arrange the squash in a single layer on the prepared baking sheet to ensure even cooking.
  6. Bake for 35–40 minutes, flipping the cubes halfway through. The squash should be caramelized and slightly crispy on the edges when done.
  7. Let the candy cool for about 10 minutes before serving to allow it to firm up slightly.
