  • ½ cup mayonnaise (use Greek yogurt as a lighter option)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, minced (or ½ teaspoon garlic powder)
  • 4 anchovy fillets, minced (optional, for traditional flavor)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Place small mounds of shredded Parmesan cheese on the lined baking sheet, spacing them about 2 inches apart. Sprinkle dried parsley over each mound if desired. Bake for 5-7 minutes, or until the cheese is melted and golden brown. Let them cool to crisp up.
  3. In a mixing bowl, combine mayonnaise, olive oil, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and anchovies (if using). Whisk until smooth and creamy. Season with salt and black pepper to taste.
  4. Wash and chop the romaine lettuce into bite-sized pieces. Pat dry with a clean towel or use a salad spinner to remove excess moisture.
  5. In a large bowl, toss the chopped romaine lettuce with the creamy Caesar dressing until evenly coated. Add croutons and grated Parmesan cheese, and toss lightly.
  6. Arrange the crispy Parmesan rounds on top of the salad for a delightful crunch. Serve immediately and enjoy!
