Irresistible Caramelized Onion Pinwheels

These buttery, flaky puff pastry pinwheels are filled with sweet caramelized onions and gooey Gruyere cheese, making them the perfect party appetizer or snack.

  • 1 package frozen puff pastry, thawed
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup shredded Gruyere cheese
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • 1 teaspoon fresh thyme (optional)
  • 1 egg, whisked with 1 tablespoon water (egg wash)

Instructions

  1. Heat 2 tablespoons of unsalted butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 25-30 minutes until they’re golden brown and caramelized. Sprinkle with a pinch of salt and black pepper halfway through. Add fresh thyme if desired.
  2. Roll out the thawed puff pastry sheets on a lightly floured surface until they’re slightly thinner and even. Work quickly to prevent the dough from becoming too soft.
  3. Spread the caramelized onions evenly across the surface of the puff pastry. Sprinkle the shredded Gruyere cheese generously over the onions.
  4. Roll the puff pastry tightly into a log, starting from the longer edge. Wrap the log in plastic wrap and refrigerate for at least 15-20 minutes (this makes slicing easier).
  5. Preheat your oven to 400°F (200°C). Using a sharp knife, slice the chilled log into ½-inch thick rounds. Place the pinwheels on a parchment-lined baking sheet, leaving space between each one.
  6. Brush the tops of the pinwheels with the egg wash to give them a golden, glossy finish.
  7. Bake in the preheated oven for 15-18 minutes, or until the puff pastry is golden brown and crispy. Let them cool slightly before serving.
