  • 3 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper, letting it hang over the sides for easy removal later.
  2. In a medium saucepan, combine the cranberries, sugar, orange juice, and orange zest. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly (about 10 minutes). Stir in the cornstarch and cook for another minute, then remove from heat and let cool.
  3. In a large mixing bowl, whisk together the flour, oats, granulated sugar, brown sugar, baking powder, and salt.
  4. Pour the melted butter and vanilla extract into the dry mixture. Stir until the mixture resembles wet sand.
  5. Press half of the crumble mixture evenly into the prepared baking dish to form the base layer. Spread the cooled cranberry mixture on top, ensuring an even layer. Sprinkle the remaining crumble mixture over the cranberry filling to form the topping.
  6. Bake the bars in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
  7. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into squares or rectangles and enjoy!
