Instructions

  1. Activate the yeast: In a small bowl, combine 1/4 cup (60 ml) of warm water with 1 teaspoon of honey and 1 teaspoon of active dry yeast. Stir gently and let sit for 5 minutes until frothy.
  2. Prepare the dough: In a large mixing bowl, combine 2 cups (250 g) of all-purpose flour, 1/2 teaspoon of sea salt, and the activated yeast mixture. Add 2 tablespoons (30 ml) of olive oil and gradually add 3/4 cup (180 ml) of warm water. Mix until a soft dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Proof the dough: Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for 30 minutes.
  5. Roll out the dough: Preheat the oven to 375°F (190°C). After the dough has risen, punch it down and roll it out on a floured surface to about 1/8 inch (3 mm) thickness.
  6. Add toppings: Sprinkle the dough evenly with 1 tablespoon of chopped rosemary and 1/4 cup (35 g) of dried cranberries. Press them gently into the dough.
  7. Cut into crackers: Use a pizza cutter or sharp knife to cut the dough into squares or rectangles—about 2-inch (5 cm) pieces work well.
