Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter gently in a saucepan or microwave until just melted; let it cool slightly (about 5 minutes).
  3. In a large bowl, whisk together the sugar and eggs vigorously for about 3-4 minutes until the mixture is pale and thick to create the shiny, crackly top.
  4. Add the melted butter and vanilla extract to the sugar-egg mixture and stir until combined and smooth.
