Soft yet sturdy gingerbread cookies with a melt-in-your-mouth texture and a tangy cream cheese frosting, perfect for holiday gatherings.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1/3 cup (80ml) unsulfured molasses
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 4 ounces (113g) cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • Optional: A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper or silicone mats.
  2. In a medium mixing bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  3. Using an electric mixer, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  4. Add the molasses, egg, and vanilla extract to the butter mixture. Beat until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until fully incorporated. Scrape down the sides of the bowl as needed.
  6. Divide the dough into two portions. Wrap each in plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Once chilled, roll out the dough on a lightly floured surface to about 1/4-inch (6mm) thickness. Use cookie cutters to create your desired shapes.
  8. Transfer your cookies to the prepared baking sheets, leaving about 1-inch (2.5cm) of space between them.
  9. Bake for 8-10 minutes, or until the edges are just starting to brown.
  10. Cool the cookies on the baking sheet for 2 minutes before transferring them to a cooling rack.
  11. For the frosting, beat the cream cheese and butter together until smooth. Add powdered sugar, vanilla, and a pinch of salt, if desired. Beat until creamy.
  12. Once the cookies are completely cooled, spread or pipe the frosting onto each one. Decorate with sprinkles for extra holiday flair!
