Instructions

  1. Heat a large skillet or saucepan over medium heat. Add 2 tablespoons of butter and 1 tablespoon of olive oil. Let the butter melt completely, then swirl to coat the pan evenly.
  2. Add the finely chopped onion and cook for about 3-4 minutes until translucent. Stir frequently to avoid browning.
  3. Stir in the minced garlic and cook for an additional 30 seconds, just until fragrant—don’t let it burn.
  4. Add the long-grain white rice to the pan. Stir constantly for 2-3 minutes to lightly toast the rice; it should start to smell slightly nutty.
  5. Pour in the chicken or vegetable broth. Stir briefly to combine, then bring to a gentle boil.
  6. Once boiling, reduce the heat to low and cover the skillet with a tight-fitting lid. Cook for 15-18 minutes until the rice absorbs all the liquid and becomes tender. Avoid opening the lid during this time.
  7. Remove from heat and let it sit, covered, for 5 minutes. This resting time helps the rice finish cooking and absorb any remaining moisture.
  8. Fluff the rice gently with a fork. Stir in the chopped parsley and dill, along with a splash of lemon juice if desired. Add salt and pepper to taste.
