Instructions

  1. Preheat the oven to 400°F (200°C). If using a cast iron skillet, place it in the oven to preheat.
  2. In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, whisk the eggs until lightly beaten. Add the buttermilk and melted butter, stirring until combined.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix.
  5. Fold in the shredded cheddar cheese, diced jalapeños, and sweet corn kernels, ensuring they are evenly distributed.
