  • 1 large butternut squash (about 2 pounds), peeled, seeded, and cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Using a sharp chef’s knife or vegetable peeler, carefully peel the butternut squash. Slice it in half lengthwise and scoop out the seeds with a spoon. Cut the squash into bite-sized cubes, roughly 1-inch in size.
  3. In a large mixing bowl, combine the cubed butternut squash, 2 tablespoons of olive oil, 2 tablespoons of pure maple syrup, 1 teaspoon of cinnamon, a pinch of salt, and a dash of black pepper. Toss well to coat every piece evenly.
  4. Spread the squash evenly on the prepared baking sheet. Be sure not to overcrowd the pan—if the pieces are too close together, they’ll steam instead of roast.
  5. Place the baking sheet in the oven and roast for 25-30 minutes, flipping the squash halfway through. You’ll know it’s done when the edges are golden brown and caramelized, and the squash is fork-tender.
  6. If you’re adding a crunchy topping like chopped pecans or walnuts, sprinkle them over the squash during the last 5 minutes of baking.
