Irresistible Stuffing Fritters Recipe with Perfect Gravy

Crispy on the outside, fluffy and flavorful on the inside, these stuffing fritters are paired perfectly with a rich, velvety gravy dipping sauce. A delicious way to repurpose holiday leftovers.

  • 2 cups leftover stuffing, any variety
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • Oil for frying (neutral oils like canola or vegetable)
  • 2 tablespoons unsalted butter (for gravy)
  • 2 tablespoons all-purpose flour (for gravy)
  • 1 cup chicken or turkey stock, warmed (for gravy)
  • 1/4 cup heavy cream (optional, for gravy)
  • Salt & pepper to taste (for gravy)

Instructions

  1. In a large mixing bowl, combine the leftover stuffing, beaten eggs, flour, Parmesan cheese, and parsley. Stir until the mixture is well-combined but not overly wet.
  2. Heat a skillet over medium heat and add enough oil to lightly coat the bottom.
  3. Using your hands or a spoon, shape the stuffing mixture into small patties, about 2 inches in diameter.
  4. Place the patties in the hot skillet, leaving space between each one. Cook for 3–4 minutes per side or until golden brown and crispy.
  5. Once the fritters are done, transfer them to a plate lined with paper towels to absorb any excess oil.
  6. For the gravy: In a small saucepan, melt butter over medium heat. Stir in the flour and cook for 1–2 minutes to create a roux.
  7. Slowly whisk in the warm stock, a little at a time, to avoid lumps. Let the mixture simmer for 3–5 minutes until thickened.
  8. If desired, stir in the heavy cream for extra richness. Season with salt and pepper to taste.
  9. Serve the fritters warm with the gravy on the side for dipping.
