  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup pecans, chopped
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth using a potato masher or fork.
  4. Add the melted butter, brown sugar, granulated sugar, beaten eggs, milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix well until everything is fully combined and the mixture is creamy.

  6. In another mixing bowl, combine the chopped pecans, all-purpose flour, softened butter, and 1/4 cup of brown sugar. Mix with your hands or a fork until it forms a crumbly texture.
  7. Sprinkle the pecan mixture evenly over the sweet potato layer.
  8. Top the casserole with mini marshmallows, covering the entire surface for that irresistible gooey finish.
  9. Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the pecan topping is crisp.
