  • 3 tablespoons creamy tahini
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ½ cup plain Greek yogurt
  • 12 teaspoons harissa paste
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Peel the sweet potatoes and cut them into evenly sized wedges, about 1-inch thickness.
  3. In a mixing bowl, combine the tahini, olive oil, garlic powder, smoked paprika, and salt. Stir until smooth and creamy.
  4. Add the sweet potato wedges to the bowl and toss until they’re thoroughly coated in the tahini mixture.
  5. Spread the coated wedges evenly on the prepared baking sheet, ensuring they’re in a single layer with space between each wedge.
  6. Roast in the preheated oven for 20 minutes. Then, flip each wedge and roast for another 15-20 minutes, or until golden brown and tender when pierced with a fork.
  7. While the potatoes are roasting, prepare the harissa yogurt. In a small bowl, whisk together the Greek yogurt, harissa paste, and lemon juice. Taste and adjust the harissa based on your heat preference.
  8. Once the sweet potato wedges are done, remove them from the oven and let them cool slightly. Transfer to a serving platter and garnish with chopped parsley, if desired.
  9. Serve the tahini-roasted sweet potato wedges warm with the harissa yogurt on the side for dipping. Enjoy!
