Ingredients

  • Soft, medium-sized flour tortillas
  • Cooked turkey, shredded or sliced
  • Cranberry sauce (homemade or store-bought)
  • Shredded cheese (mozzarella and sharp cheddar blend)
  • Baby spinach leaves
  • Butter or oil
  • Optional toppings: sour cream, guacamole, chopped nuts

Instructions

  1. Chop or shred the cooked turkey into bite-sized pieces. Thin cranberry sauce with a splash of water if needed.
  2. Place a large skillet or griddle over medium heat. Add a small amount of butter or oil and let it melt completely.
  3. Lay one tortilla flat on a clean surface. Spread a thin layer of cranberry sauce over one-half of the tortilla. Top with shredded cheese, turkey, and spinach leaves. Fold the tortilla over to create a half-moon shape.
