  • 2 tablespoons unsalted butter, divided
  • 8 ounces cremini or baby bella mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup (4 fl oz) heavy cream or half-and-half
  • 1/2 cup (4 fl oz) low sodium chicken broth
  • 1/4 cup (2 fl oz) white wine (optional)
  • Fresh thyme or parsley, for garnish (optional)

Instructions

  1. Pat the pork chops dry with paper towels to remove excess moisture. Season both sides liberally with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. Heat a heavy skillet or cast iron pan over medium-high heat and add 1 tablespoon olive or avocado oil. Heat until shimmering but not smoking, about 2–3 minutes.
  3. Place the pork chops in the hot pan without crowding. Sear without moving for about 4 minutes until a golden-brown crust forms. Flip and sear the other side for another 3–4 minutes. Thicker chops may need an extra minute or two.
  4. Reduce heat to medium-low, add 1 tablespoon butter to the pan, and spoon melted butter over the chops while cooking for another 2–3 minutes. Use a meat thermometer to check for an internal temperature of 145°F (63°C). Remove chops to a plate and tent with foil to rest for 5 minutes.
  5. In the same pan, add the remaining 1 tablespoon butter. Add sliced mushrooms and sauté for 5 minutes until browned and tender. Add minced garlic and cook until fragrant, about 30 seconds. If using, pour in 1/4 cup white wine to deglaze the pan, scraping up browned bits.
  6. Stir in 1/2 cup chicken broth, bring to a simmer, and reduce slightly, about 3 minutes. Lower heat and whisk in 1/2 cup heavy cream and 1 tablespoon Dijon mustard until smooth and creamy. Simmer gently for 2–3 minutes until sauce thickens slightly. Taste and adjust seasoning with salt and pepper.
  7. Spoon the creamy Dijon mushroom sauce over the rested pork chops. Garnish with fresh thyme or parsley if desired. Serve immediately.

Pat pork chops dry before searing to ensure a good crust. Do not overcrowd the pan to avoid steaming. Use a meat thermometer to avoid overcooking; rest chops before serving to keep them juicy. Deglaze pan with wine or broth for rich sauce flavor. Simmer sauce gently to prevent curdling. For dairy-free, substitute cream with coconut cream and butter with plant-based alternatives.
