  • 2 tablespoons ketchup
  • 1 teaspoon prepared horseradish (optional)
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional toppings: shredded lettuce or cabbage, thinly sliced red onion, pickles or jalapeños, fresh cilantro

Instructions

  1. Make the Comeback Sauce: In a small bowl, whisk together mayonnaise, ketchup, horseradish, hot sauce, Worcestershire sauce, smoked paprika, and garlic powder. Season with salt and pepper to taste. Cover and refrigerate for at least 15 minutes.
  2. Prepare the Beef: Divide the ground beef into 6 equal portions (about 3 oz or 85g each). Gently roll each into a loose ball without packing tightly.
  3. Heat the Skillet: Place a cast iron skillet or heavy-bottomed pan over medium-high heat and add 1 tablespoon of oil. Heat until shimmering but not smoking.
  4. Smash the Patties: Place one beef ball in the skillet. Using a metal spatula, press down firmly but gently to flatten into a thin patty about ¼-inch thick. Hold for 10 seconds to create a crust. Repeat with remaining patties, cooking in batches if needed.
  5. Season: Immediately sprinkle salt and freshly ground black pepper on each patty.
  6. Cook the Patties: Let patties cook undisturbed for 2–3 minutes until edges are deeply browned and crispy. Flip carefully.
  7. Add Cheese: Place a slice of American cheese on each patty after flipping. Cook another 1–2 minutes until cheese melts and beef is cooked through but still juicy.
  8. Warm the Tortillas: While patties finish cooking, warm tortillas in a dry skillet or microwave wrapped in a damp paper towel until soft and pliable.
  9. Assemble the Tacos: Place each cheesy patty on a warm tortilla. Spoon a generous dollop of comeback sauce over the top. Add optional toppings like shredded lettuce, sliced onion, and pickles if desired.
