  • 1 1/2 cups cottage cheese, blended until smooth
  • 2 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, mix the flour, sugar, softened butter, and pinch of salt until crumbly. Press the mixture evenly into the bottom of the prepared pan. Bake for 12-15 minutes or until lightly golden. Let it cool slightly.
  3. Blend the cottage cheese in a food processor or blender until smooth. Transfer to a large mixing bowl and whisk in the eggs, sugar, lemon juice, lemon zest, flour, and vanilla extract until combined.
  4. Spread the lemon-cottage cheese mixture evenly over the cooled crust.
  5. Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and slightly golden at the edges.
  6. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
  7. Cut into squares or rectangles, and serve chilled.
