  • 4 large eggs (at room temperature)
  • 1 cup whole milk
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 6 strips thick-cut bacon, cooked and crumbled
  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter, melted
  • Optional toppings: chopped pecans or walnuts, flaky sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Fry the bacon strips in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate to cool. Once cool, crumble into bite-sized pieces.
  3. Open the cans of cinnamon rolls and cut each roll into quarters. Place the pieces evenly into the greased baking dish.
  4. In a mixing bowl, whisk together the eggs, milk, maple syrup, and vanilla extract until smooth.
  5. Pour the egg mixture evenly over the cinnamon roll pieces, ensuring they’re well-coated. Sprinkle the crumbled bacon over the top.
  6. Place the dish in the preheated oven and bake for 35-40 minutes, or until the egg mixture is set and the cinnamon rolls are golden brown.
  7. While the casserole is baking, whisk together the powdered sugar, melted butter, and two tablespoons of maple syrup to make the glaze. Add more maple syrup if needed for a pourable consistency.
  8. Once the casserole is done, remove it from the oven and let it cool for 5-10 minutes. Drizzle the maple glaze generously over the top.
  9. Serve warm, garnished with chopped nuts or a sprinkle of sea salt if desired.
