  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 1/3 cup (80ml) pure maple syrup
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (120g) chopped, toasted walnuts
  • 3/4 cup (150g) butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch baking dish with parchment paper, leaving a bit of overhang for easy removal later.
  2. In a large mixing bowl, cream together 1 cup (226g) of softened unsalted butter and 1 cup (200g) of brown sugar until light and fluffy. Add 1/3 cup (80ml) of pure maple syrup, 2 large eggs, and 2 teaspoons of vanilla extract. Whisk until smooth and well combined.
  3. In a separate bowl, whisk together 2 cups (250g) of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  4. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  5. Fold in 1 cup (120g) of chopped, toasted walnuts and 3/4 cup (150g) of butterscotch chips until evenly distributed.
  6. Pour the batter into the prepared baking dish, spreading it out evenly with your spatula.
  7. Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
  8. Allow the blondies to cool completely in the pan before using the parchment paper to lift them out. Slice into squares or rectangles and serve.
