Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt the butter. Stir continuously as it foams and turns golden brown with nutty aromas, about 4-5 minutes. Remove from heat and pour into a bowl to cool slightly.
  2. Prep the zucchini: Grate the unpeeled zucchini using the fine side of a box grater. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture until damp but not soggy.
  3. Mix wet ingredients: In a large bowl, mash the ripe bananas with a fork until smooth but slightly chunky. Add the brown butter, sugar, eggs, and vanilla extract. Whisk together until combined and glossy.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Bring it together: Gently fold the dry ingredients into the wet mixture using a spatula. Stop mixing as soon as no streaks of flour remain. Fold in the grated zucchini and nuts if using.
