No-Melt Watermelon Feta Mint Skewers

A refreshing and easy summer snack featuring firm watermelon cubes, block feta, and fresh mint leaves threaded on skewers with a lime-olive oil drizzle and black pepper.

Ingredients

  • Medium-firm seedless watermelon, cut into 1-inch cubes
  • 8 ounces block feta cheese, cut into 1-inch cubes
  • 24 fresh mint leaves, washed and patted dry
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil
  • Freshly cracked black pepper, to taste
  • 1 teaspoon honey (optional)
  • About 12 wooden skewers, soaked in water for 10 minutes

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds.
  2. Slice the block feta into cubes roughly the same size as the watermelon.
  3. Rinse and pat dry the mint leaves carefully to avoid wilting.
  4. In a small bowl, whisk together lime juice, olive oil, and honey if using.
  5. Assemble the skewers by threading one watermelon cube, a folded mint leaf, a feta cube, another folded mint leaf, and finishing with a watermelon cube.
  6. Arrange the skewers on a serving platter and lightly drizzle with the lime-olive oil dressing.
  7. Sprinkle freshly cracked black pepper over the skewers.
  8. Chill the skewers in the refrigerator for at least 15 minutes before serving to let flavors meld and keep them cool (optional but recommended).

Notes

Use firm, medium-firm watermelon cubes to prevent sogginess. Choose block-style feta that holds shape well. Fold mint leaves before threading to avoid tearing. Soak wooden skewers before grilling if desired. Chill skewers before serving for best flavor and freshness. Optional honey adds sweetness if watermelon is less sweet.
