A buttery, golden cake with vibrant cranberries and a hint of orange zest, perfect for holiday gatherings and celebrations.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh cranberries
  • 1 tablespoon orange zest
  • Powdered sugar for dusting or optional glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your cake pan and line the bottom with parchment paper for easy removal.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy—this should take about 3-4 minutes with a mixer.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Fold in the fresh cranberries and orange zest gently using a spatula. Be careful not to overmix, as this can make the cake dense.
  6. Pour the batter into the prepared cake pan and smooth the top with your spatula.
  7. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes before transferring it to a wire rack.
  9. Dust with powdered sugar or drizzle with a simple glaze made from powdered sugar and orange juice.

Notes

[‘Toss cranberries in a little flour before folding them into the batter to prevent them from sinking.’, ‘Use room-temperature ingredients for a smooth batter and even baking.’, ‘Cover the cake loosely with aluminum foil for the last 10 minutes of baking if it starts browning too quickly.’, ‘You can prepare the batter a day in advance and refrigerate it; bring it back to room temperature before baking.’]
