Instructions

  1. Wash the cucumbers thoroughly and dry them with a clean towel. Using a sharp knife or mandoline slicer, cut them into thin, even slices. Sprinkle a pinch of salt over the slices and set them aside for 5 minutes to draw out excess moisture. Pat them dry with a paper towel.
  2. In a mixing bowl, combine cream cheese, mayonnaise, fresh dill, fresh chives, lemon juice, salt, and black pepper. Mix until smooth and creamy.
  3. Lay out the slices of white bread and use a knife to trim off the crusts for a clean, classic look.
  4. Spread a generous layer of the cream cheese mixture onto one side of each slice of bread. Arrange the cucumber slices on half of the bread slices, overlapping them slightly for full coverage. Top with the remaining bread slices, spread-side down.
  5. Using a sharp knife, cut each sandwich into quarters, creating neat triangles or rectangles. Wipe the knife between cuts to keep the edges clean.
  6. Refrigerate the sandwiches for 30 minutes before serving to allow the flavors to meld together and ensure freshness.
