Ingredients

  • Brie cheese, soft and creamy (preferably President brand)
  • Aged cheddar, sharp and crumbly
  • Manchego, firm and slightly nutty
  • Prosciutto slices, thinly shaved
  • Spicy chorizo, sliced
  • Soppressata
  • Seedless green grapes
  • Marinated olives (Castelvetrano preferred)
  • Cornichons or small pickles
  • Fresh figs or dried apricots
  • Multigrain crackers
  • Thinly sliced baguette, toasted
  • Candied pecans (homemade or store-bought cinnamon sugar pecans)
  • Honey drizzle
  • Fresh rosemary sprigs for garnish

Instructions

  1. Take the brie, cheddar, and manchego out of the fridge about 20 minutes before assembling to soften.
  2. Slice the cheddar and manchego into thin wedges or cubes; leave the brie whole or cut into smaller wedges just before serving.
  3. Arrange prosciutto, chorizo, and soppressata on a plate and loosely fold or roll slices to add volume and texture.
  4. Wash grapes and figs, then pat dry. Halve figs if large.
  5. Place olives and cornichons in small bowls to contain juices.
  6. Slice the baguette thinly and toast at 350°F (175°C) for about 5 minutes until golden and slightly crisp.
  7. Arrange cheeses spaced out on the board. Add bowls of olives and nuts next, then tuck in meats around the cheeses.
