  • 4 cups (480g) powdered sugar, sifted
  • 2 tbsp heavy cream or milk
  • 1 tsp vanilla extract (for buttercream)
  • ¼ cup (40g) rainbow sprinkles, plus extra for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan with butter or non-stick spray and lightly dust with flour.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat 1 cup softened butter with sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Stir in vanilla extract.
  5. Reduce mixer speed to low. Add flour mixture in three additions, alternating with milk, starting and ending with flour. Mix just until combined.
  6. Gently fold ½ cup sprinkles into the batter with a rubber spatula, being careful not to overmix.
  7. Pour batter into prepared pan and smooth the top evenly. Bake 35-40 minutes or until a toothpick inserted near the center comes out clean or with a few moist crumbs.
  8. Let cake cool in pan for 15 minutes, then transfer to a wire rack to cool completely before frosting.
  9. For the buttercream, beat 1 cup softened butter until creamy. Gradually add powdered sugar on low speed to avoid sugar clouds.
  10. Add heavy cream and vanilla extract, then beat on medium-high speed until light and fluffy, about 3 minutes.
  11. Gently fold ¼ cup sprinkles into the buttercream.
  12. Spread buttercream evenly over cooled cake and sprinkle extra rainbow sprinkles on top.

Notes

Use small, firm sprinkles like jimmies to prevent color bleeding. For a gluten-free version, substitute all-purpose flour with gluten-free flour blend and reduce milk slightly. Room temperature ingredients blend better. Avoid frosting a warm cake to prevent buttercream melting. If buttercream is too thick, add more cream; if too thin, add more powdered sugar.
