  • 2 lobster tails (68 ounces each, thawed if frozen)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, finely chopped for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat your broiler: Set your oven rack about 6 inches from the heat source. Preheat the broiler to high (around 500°F or 260°C). This usually takes 5 minutes.
  2. Prepare the lobster tails: Using kitchen scissors or a sharp knife, carefully cut through the top shell of each lobster tail lengthwise, stopping just before the tail fin. Gently pry the shell apart and lift the lobster meat out, resting it on top of the shell.
  3. Make the garlic butter: In a small bowl, combine softened butter, minced garlic, lemon juice, smoked paprika, salt, and pepper. Mix well until fully blended. Taste and adjust seasoning if needed.
  4. Brush the garlic butter: Generously brush the garlic butter over the exposed lobster meat, making sure every crevice is covered. Save a little butter for basting later.
  5. Broil the lobster tails: Place the lobster tails on the baking sheet and slide under the broiler. Cook for 8-10 minutes, basting once halfway through with remaining garlic butter. The lobster meat should turn opaque and firm but still juicy.
  6. Check doneness: The internal temperature should reach about 140°F (60°C). The meat will curl slightly and be white with a hint of pink.
  7. Garnish and serve: Sprinkle chopped parsley over the lobster tails and serve immediately with lemon wedges on the side. Drizzle any leftover garlic butter on top if desired.

Notes

Use softened butter for easy mixing and spreading. Keep a close eye on the lobster while broiling to avoid overcooking. The piggyback cut technique ensures even cooking and a prettier presentation. For a dairy-free version, substitute butter with olive oil or vegan butter. Rotate the baking sheet halfway if your broiler heats unevenly.
