Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, beat 4 tablespoons softened unsalted butter with 1/4 cup packed brown sugar and 2 tablespoons granulated sugar until light and fluffy, about 2 to 3 minutes with a hand mixer or 4 minutes by hand.
  3. Mix in 1 large egg yolk and 1 teaspoon vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together 1/2 cup + 2 tablespoons all-purpose flour, 1/4 teaspoon baking soda, and a pinch of salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix; a few streaks of flour are okay.
  6. Fold in 1/3 cup semi-sweet chocolate chips and nuts if using.
  7. Use a cookie scoop or spoon to drop 6 equal mounds of dough spaced about 2 inches apart on the prepared baking sheet.
  8. Bake for 12-14 minutes until cookies look set but still soft in the center and edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
