  • 1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 cup broccoli florets (fresh or frozen)
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned or thinly sliced
  • 23 green onions, chopped (for garnish)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons honey (raw or wildflower honey recommended)
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger (or ½ teaspoon ground ginger)
  • 2 garlic cloves, minced
  • 2 tablespoons vegetable oil (or avocado/canola oil)
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Optional: ½ teaspoon chili flakes or a dash of sriracha

Instructions

  1. Slice chicken into thin strips about ½ inch thick. Toss with cornstarch, salt, and pepper. Set aside for 5 minutes.
  2. Whisk together soy sauce, honey, rice vinegar, toasted sesame oil, grated ginger, and minced garlic in a small bowl. Set aside.
  3. Prepare vegetables: slice broccoli florets, red bell pepper, and carrot; chop green onions for garnish.
  4. Heat a large skillet or wok over medium-high heat and add vegetable oil. Heat until shimmering but not smoking.
  5. Add chicken strips in a single layer. Cook without stirring for 3–4 minutes until golden crust forms, then flip and cook another 2 minutes until cooked through. Remove chicken and set aside.
  6. In the same pan, add a little more oil if needed. Stir-fry broccoli, bell pepper, and carrots for 3–4 minutes until tender-crisp.
  7. Return chicken to the pan, pour in the honey soy sauce, and toss to coat evenly. Cook for 1–2 minutes until sauce thickens and glazes the ingredients.
  8. Sprinkle chopped green onions on top. Adjust seasoning with salt or more soy sauce if needed. Serve immediately over steamed rice or noodles.

Notes

For gluten-free, substitute tamari for soy sauce and arrowroot powder for cornstarch. Do not overcrowd the pan to ensure proper searing. Use high heat and a hot pan for best results. If sauce is not thickening, mix a small amount of cornstarch with water and stir in during the last minute of cooking.
