  • 3 cups (about 300 grams) fresh broccoli florets, trimmed and washed
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 3 tablespoons soy sauce (regular or low sodium)
  • 1 tablespoon oyster sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (neutral oil like canola)
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water
  • 2 stalks green onions, sliced thinly (optional)

Instructions

  1. Thinly slice 8 ounces of flank or sirloin steak against the grain. Toss with 1 teaspoon cornstarch mixed with 2 tablespoons cold water and let sit for 5 minutes.
  2. In a small bowl, combine 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar, and 1 teaspoon grated ginger. Stir until sugar dissolves and set aside.
  3. Cut 3 cups of fresh broccoli into bite-sized florets, rinse and drain well.
  4. Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat until shimmering but not smoking.
  5. Add the beef in a single layer, sear undisturbed for 1 minute, then stir-fry for 2 minutes until browned but not overcooked. Transfer to a plate.
  6. Add a splash more oil if needed, then add minced garlic and stir for 15 seconds until fragrant.
  7. Add broccoli florets and stir-fry for 3-4 minutes until crisp-tender.
  8. Return beef to the pan, pour in the sauce mixture, and toss together. Stir-fry for 1-2 minutes until sauce thickens slightly and coats ingredients.
  9. Drizzle with 1 teaspoon sesame oil, toss gently, remove from heat, and garnish with sliced green onions if desired.

Notes

Slice beef thinly against the grain for tenderness. Avoid overcrowding the pan to prevent steaming. Use high heat for a good sear. Mix cornstarch with cold water to thicken sauce near the end. Frozen broccoli can be used if thawed and drained well. For gluten-free, substitute tamari for soy sauce and ensure oyster sauce is gluten-free.
