  • 2 medium zucchinis (about 12 ounces), sliced into ¼-inch thick half-moons
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small yellow or white onion, finely diced
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep your ingredients: Slice the zucchini into ¼-inch thick half-moons, finely dice the onion, mince the garlic, and crumble the feta. (5 minutes)
  2. Heat the skillet over medium-high heat and add 1 tablespoon of olive oil. Warm until shimmering but not smoking.
  3. Add the ground turkey, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Season lightly with salt and pepper as it cooks. Stir occasionally.
  4. Push the turkey to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side, then add the diced onion. Cook until softened and translucent, about 3 minutes.
  5. Add the garlic and oregano, stirring for 30 seconds until fragrant. Be careful not to burn the garlic.
  6. Stir the zucchini into the skillet, combining with turkey and onions. Season with salt, pepper, and red pepper flakes if using. Cook for 5-7 minutes, stirring occasionally, until zucchini is tender but still slightly crisp.
  7. Remove the skillet from heat. Drizzle fresh lemon juice over the mixture, then sprinkle crumbled feta on top. Gently fold to combine, allowing the warm skillet to soften the cheese slightly without melting it.
  8. Garnish with chopped fresh parsley and serve hot, optionally with warm pita or a side salad.

If zucchini is watery, salt it lightly and let it sit for 10 minutes before cooking, then pat dry to reduce moisture. Avoid overcrowding the pan to ensure proper browning. Add salt and pepper in layers for better flavor. Use fresh lemon juice for best brightness. Add feta off heat to keep its crumbly texture.
