  • 1/4 cup soy sauce (60 ml)
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger (optional)
  • 1 tablespoon toasted sesame oil
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 cups cooked rice (about 600 g), jasmine or short grain

Instructions

  1. Cook 3 cups (600 g) of rice according to package instructions, usually simmering with 3.5 cups (830 ml) of water for 15-20 minutes. Keep warm.
  2. Toast 1 tablespoon sesame seeds in a small dry skillet over medium heat, stirring frequently for 2-3 minutes until golden and fragrant. Remove and set aside.
  3. In a small bowl, combine 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon toasted sesame oil, minced garlic, and grated ginger (if using). Stir until sugar dissolves.
  4. Heat a large skillet over medium-high heat. Add 1 pound ground beef, breaking it up with a wooden spoon. Cook 5-7 minutes until mostly browned with some caramelized bits. Drain excess fat if needed.
  5. Pour the sauce mixture over the beef. Stir well to coat. Reduce heat to medium and simmer uncovered for 4-5 minutes until sauce thickens and becomes glossy.
  6. Stir in sliced green onions and red pepper flakes (optional). Taste and adjust seasoning if needed.
  7. Assemble bowls by spooning warm cooked rice, topping with the beef mixture, and sprinkling toasted sesame seeds on top.

Notes

If beef feels dry, add a splash of water or beef broth during simmering to loosen the sauce. Avoid overcrowding the pan to ensure proper caramelization. Toast sesame seeds carefully to prevent burning. Adjust seasoning with extra soy sauce, brown sugar, or a splash of lime juice or rice vinegar as needed.
