  • 1/4 cup apple cider vinegar (raw, unfiltered with ‘the mother’)
  • 1/3 cup sugar or honey (or maple syrup for refined sugar-free option)
  • 1 1/2 cups water
  • Optional: Fresh herbs (e.g., basil, mint, thyme)

Instructions

  1. In a blender, combine 1 cup of fresh fruit, 1/4 cup apple cider vinegar, and 1/3 cup of sugar or honey. Blend until smooth. Add herbs if desired.
  2. Pour the mixture into a fine mesh strainer set over a bowl to remove seeds or pulp. Press the mixture through with a spatula.
  3. Add 1 1/2 cups of water to the strained mixture and stir well. Taste and adjust sweetness or tartness as needed.
  4. Carefully pour the mixture into popsicle molds, leaving a small gap at the top for expansion during freezing.
  5. Insert popsicle sticks into the molds. If molds don’t have built-in stick holders, freeze for about an hour before inserting sticks.
  6. Freeze for at least 4-6 hours, or until completely solid.
  7. Run molds under warm water for a few seconds to release the popsicles before serving.
