Refreshing Lavender Honey Lemonade

A calming and refreshing lemonade infused with floral lavender, sweet honey, and bright lemon juice. Perfect for unwinding or serving at any occasion.

  • 2 tablespoons dried culinary lavender buds (food-grade)
  • 4 cups (960 ml) filtered or spring water
  • 4 medium fresh lemons (juice and zest)
  • 1/3 cup (113 g) raw honey (preferably local)
  • Ice cubes, to serve
  • Optional: fresh mint leaves for garnish

Instructions

  1. Bring 4 cups (960 ml) of filtered water to a rolling boil in a medium saucepan (about 5 minutes).
  2. Remove from heat and add 2 tablespoons of dried culinary lavender buds. Cover and steep for 10 minutes.
  3. Strain the lavender infusion through a fine mesh strainer or cheesecloth into a pitcher, discarding the buds. Press gently to extract flavor but avoid bitterness.
  4. Juice 4 medium lemons (about 1/2 cup or 120 ml juice) and add the juice and zest from one lemon to the lavender water.
  5. While the lavender water is still warm (not hot), stir in 1/3 cup (113 g) raw honey until fully dissolved. Adjust sweetness if needed.
  6. Add ice cubes to the pitcher or pour lemonade over ice in glasses. Garnish with fresh mint leaves and lemon wheels if desired.

Notes

Do not oversteep lavender to avoid bitterness; steep for about 10 minutes. Use culinary-grade lavender. Sweeten while the liquid is warm for better honey dissolution. Adjust acidity with more honey or water if needed. For a fizzy twist, substitute half the water with sparkling water before serving. Store refrigerated up to 3 days; do not freeze.
