A quick and easy homemade summer drink combining tart lemon juice, sweet blueberries, and honey for a perfectly icy and refreshing slushie.

Ingredients

Scale
  • 4 large fresh lemons, juiced (about 1/2 cup or 120 ml lemon juice)
  • 2 cups (300 grams) frozen blueberries
  • 1/4 cup (60 ml) honey (or maple syrup/agave for vegan option)
  • 2 cups (475 ml) cold water
  • 2 cups (about 300 grams) ice cubes
  • Optional garnish: fresh mint leaves or lemon slices

Instructions

  1. Roll each lemon on the countertop to loosen the juice. Cut in half and use a citrus juicer to extract about 1/2 cup (120 ml) of fresh lemon juice. Remove any seeds.
  2. Add lemon juice, frozen blueberries, honey, and cold water to the blender jar. Mix for about 2 minutes.
  3. Add ice cubes to the blender.
  4. Pulse the blender in 10-second bursts, checking the texture between pulses, until you achieve a slushy consistency with small bits of crushed ice and blueberry skin visible (about 1-2 minutes). Avoid over-blending.
  5. Taste and adjust sweetness by adding more honey if desired. If too thick, add a splash of cold water and blend briefly.
  6. Serve immediately in tall glasses, garnished with lemon slices or fresh mint if desired.

Notes

Use frozen blueberries to keep the drink cold without watering it down. Pulse blend to maintain texture with blueberry bursts. Chill glasses beforehand to keep slushie cold longer. Serve immediately for best texture. For vegan option, substitute honey with maple syrup or agave nectar. Adding sparkling water before serving creates a fizzy twist.
