  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (or honey/agave syrup to taste)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cups sparkling lemonade (natural brand like San Pellegrino or homemade)
  • 3 cups crushed ice
  • A handful fresh mint leaves, roughly chopped (optional)
  • Strawberry slices for garnish

Instructions

  1. Wash, hull, and slice about 2 cups of fresh strawberries. Place them in a large mixing bowl.
  2. Sprinkle 1/4 cup granulated sugar over the strawberry slices. Gently toss to coat. Let sit for 10 minutes to macerate.
  3. Juice about 2 fresh lemons to yield 1/4 cup lemon juice. Strain if desired. Add lemon juice to the macerated strawberries and stir gently.
  4. Pour 4 cups of chilled sparkling lemonade into the strawberry mixture. Stir carefully to combine without breaking up the berries.
  5. Just before serving, add 3 cups of crushed ice and a handful of chopped fresh mint leaves. Garnish with whole strawberry slices floating on top.

Notes

Make the strawberry mixture up to 2 hours ahead and keep chilled. Add sparkling lemonade and crushed ice just before serving to keep the fizz alive. Use clear glasses to showcase the vibrant color and garnish with mint or strawberry slices. For less sweetness, reduce sugar or substitute with natural sweeteners. For an adult version, add a splash of vodka or rum.
