Refreshing Virgin Strawberry Mojito

A simple, fresh, and cooling non-alcoholic mojito featuring fresh strawberries, mint, lime juice, and soda water. Perfect for a quick, guilt-free refreshment any time of year.

Ingredients

  • 68 medium fresh strawberries, hulled and quartered
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 1 to 2 tablespoons simple syrup (or maple syrup/agave nectar as substitute)
  • 1 cup (240 ml) chilled soda water
  • Ice cubes (about 1 cup or 240 ml)
  • Optional: strawberry slices or wedges for garnish
  • Optional: lime slices for garnish

Instructions

  1. Wash strawberries and mint leaves thoroughly. Remove strawberry stems and quarter the berries. Pluck 10-12 mint leaves, discarding bruised or darkened ones.
  2. In a serving glass, add quartered strawberries and mint leaves. Gently muddle to bruise mint and crush berries, releasing juices and oils. Avoid over-muddling to prevent bitterness.
  3. Add freshly squeezed lime juice and simple syrup. Stir gently to combine.
  4. Fill the glass about three-quarters full with ice cubes.
  5. Slowly pour chilled soda water over the ice to fill the glass. Stir gently to mix without losing fizz.
  6. Garnish with a sprig of fresh mint and a slice of strawberry or lime on the rim. Serve immediately.

Notes

Muddle gently to avoid bitterness from mint stems. Use fresh lime juice for best flavor. Adjust simple syrup to taste depending on strawberry sweetness. Prepare muddled base up to 24 hours ahead and add soda and ice just before serving to preserve fizz.
