A quick and easy 5-minute summer mocktail combining fresh watermelon, mint, lime, sugar, and sparkling water for a bright, refreshing drink perfect for any occasion.

Ingredients

  • 2 cups (300 grams) fresh watermelon, cubed and deseeded
  • 1012 fresh mint leaves
  • 2 tablespoons (30 ml) freshly squeezed lime juice
  • 1 to 2 teaspoons granulated sugar or simple syrup
  • 1 cup (240 ml) chilled sparkling water
  • Crushed ice as needed
  • Optional: splash of club soda
  • Optional: honey or agave syrup instead of sugar
  • Optional garnish: watermelon cubes and mint sprigs

Instructions

  1. Cube about 2 cups (300 grams) of fresh watermelon. Add the cubes to a blender or food processor and pulse just until you get a smooth but slightly textured puree (about 20-30 seconds).
  2. Place 10-12 fresh mint leaves in a sturdy glass or small bowl. Add 1 to 2 teaspoons of granulated sugar or simple syrup. Using a muddler or the back of a wooden spoon, press gently to release the mint’s essential oils without tearing the leaves into pieces (about 30 seconds).
  3. Squeeze 2 tablespoons (30 ml) of fresh lime juice over the muddled mint and sugar. Stir gently to combine, making sure the sugar dissolves. Add a splash of water if needed to help dissolve sugar.
  4. Pour the watermelon puree into the glass with the mint mixture. Stir gently to blend the flavors together. Taste and adjust sweetness or lime if needed.
  5. Fill the glass with crushed ice (about 1 cup or as desired). Slowly top with 1 cup (240 ml) of chilled sparkling water or club soda. Stir lightly once more to mix without losing bubbles.
  6. Garnish with a sprig of fresh mint and a small wedge or cube of watermelon on the rim. Serve immediately with a straw or stirrer.

Notes

Do not over-muddle the mint to avoid bitterness. Use freshly squeezed lime juice for best flavor. Prepare watermelon puree ahead but mix with mint and sparkling water just before serving to keep fizz fresh. Crushed ice chills faster and adds texture. For batch preparation, keep watermelon puree and mint-lime base separate until serving.
