A rich and velvety peach butter made in a slow cooker with bourbon and vanilla for a deeply flavorful, easy homemade spread perfect for toast, yogurt, and more.

Ingredients

Scale
  • 3 pounds fresh peaches, peeled, pitted, and sliced
  • 2 tablespoons bourbon
  • 1 teaspoon pure vanilla extract
  • 1/2 cup packed dark brown sugar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Peel, pit, and slice approximately 3 pounds of fresh peaches. If peaches are very ripe and soft, roughly chop them instead.
  2. Place the sliced peaches into the slow cooker. Add 1/2 cup packed dark brown sugar, 2 tablespoons bourbon, 1 teaspoon pure vanilla extract, 2 tablespoons fresh lemon juice, 1/2 teaspoon ground cinnamon (optional), and a pinch of salt.
  3. Stir everything gently to combine. Cover and set the slow cooker on low. Cook for 8 to 10 hours, stirring every 2 to 3 hours if possible.
  4. After about 8 hours, check the peach mixture. It should be soft and thickened. If still chunky, continue cooking up to 10 hours until jammy. If too watery, leave lid slightly ajar for the last hour to evaporate moisture.
  5. Using an immersion blender, puree the peach mixture inside the slow cooker until smooth and creamy. If using a regular blender, let mixture cool slightly, then blend in batches.
  6. Let the peach butter cool to room temperature before transferring to sterilized glass jars or airtight containers. Refrigerate for up to 2 weeks or freeze for up to 3 months.

Notes

Stir every few hours during cooking to prevent sticking and promote even cooking. Use ripe peaches for best flavor. If peach butter is too firm after cooling, stir in a teaspoon of warm water when reheating to restore spreadability. For alcohol-free version, substitute bourbon with extra vanilla extract or apple cider. Store in sterilized jars and refrigerate promptly.
