  • 1/2 cup (113 g) unsalted butter, cold and diced
  • 34 tablespoons (4560 ml) ice water
  • 3 large fresh peaches, peeled and sliced about 1/4 inch thick (about 2 cups)
  • 4 ounces (115 g) cream cheese, softened
  • 2 tablespoons granulated sugar, divided
  • 1 tablespoon (15 ml) lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons honey
  • 1 egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Make the crust dough: In a large bowl, whisk together flour, sugar, and salt. Add cold, diced butter and cut into flour using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized bits. Add ice water 1 tablespoon at a time, mixing gently until dough just holds together when pressed. Form dough into flat disc, wrap in plastic, and chill for at least 30 minutes.
  2. Prepare the filling: Combine softened cream cheese with 1 tablespoon sugar, vanilla extract, and ground cinnamon in a medium bowl. Mix until smooth and creamy. In another bowl, toss sliced peaches with lemon juice and remaining 1 tablespoon sugar, coating evenly. Set aside to macerate.
  3. Roll out the dough: On a lightly floured surface, roll chilled dough into roughly 12-inch (30 cm) circle about 1/8-inch (3 mm) thick. Uneven edges are fine for rustic look.
  4. Assemble the galette: Spread cream cheese mixture evenly over center of dough, leaving about 2-inch (5 cm) border. Arrange peach slices over cream cheese in overlapping pattern, leaving edges clear. Fold dough edges over peaches, pleating gently to create rustic border.
  5. Apply egg wash and bake: Brush crust with egg wash. Place galette on parchment-lined baking sheet and bake in preheated oven at 375°F (190°C) for 35-40 minutes or until crust is golden and peaches are bubbling.
  6. Finish with honey drizzle: Remove galette from oven and let cool slightly on wire rack. Drizzle honey over warm peaches just before serving.

Notes

Keep ingredients cold for a flakier crust. Chill dough well before rolling. If peaches are very juicy, sprinkle 1 teaspoon cornstarch over them before folding crust to prevent sogginess. Watch baking closely and tent with foil if crust edges brown too quickly. Use mild floral honey for drizzle or experiment with clover or orange blossom varieties. Dough can be prepared in advance and refrigerated or frozen.
