These salted caramel cookies are a quick and easy treat that combines chewy and crisp textures with pockets of gooey salted caramel, perfect for cozy baking and crowd-pleasing occasions.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (220g) packed brown sugar
  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (160g) salted caramel bits or chopped soft caramel candies
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, beat the softened unsalted butter and packed brown sugar until light and fluffy, about 3-4 minutes.
  3. Gradually mix in the all-purpose flour until just combined, being careful not to overmix.
  4. Fold in the salted caramel bits or chopped soft caramel candies gently.
  5. Use a tablespoon or cookie scoop to drop rounded balls about 2 inches apart on the baking sheet.
  6. Lightly dust each cookie ball with a pinch of flaky sea salt.
  7. Bake for 12-14 minutes until edges are golden and centers look set but still soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a cooling rack to finish cooling.

Notes

Chill the dough for 15 minutes before baking if caramel bits start melting too fast to help cookies hold their shape. Avoid overmixing after adding flour to prevent tough cookies. For more chewiness, try swapping half the butter for browned butter. Store leftovers in an airtight container at room temperature for up to 4 days or freeze for up to 2 months.
