  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup water or low-sodium chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish with olive oil or non-stick spray.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the finely chopped onion and cook until translucent and soft, about 5-7 minutes. Stir in minced garlic during the last minute.
  3. In a large mixing bowl, combine brown sugar, bourbon, Dijon mustard, tomato paste, apple cider vinegar, smoked paprika, cayenne (if using), salt, and pepper. Stir until smooth and glossy.
  4. Stir in the cooked or canned beans along with the sautéed onions and garlic. Pour in 1/2 cup water or broth and gently fold everything together.
  5. Pour the bean mixture into the prepared baking dish, spreading evenly.
  6. Bake uncovered on the middle rack for 45-50 minutes until the beans bubble and the sauce thickens and caramelizes around the edges.
  7. Remove from oven and let rest for 10 minutes before serving.
