Instructions

  1. Peel and slice 1 pound (450 grams) of carrots into ¼-inch (0.6 cm) thick rounds, keeping slices even for uniform cooking (about 5 minutes).
  2. Place a skillet over medium heat and add 1 tablespoon olive oil and 2 tablespoons softened unsalted butter. Allow the butter to melt completely and start to foam gently (about 1-2 minutes).
  3. Add the sliced carrots to the pan and stir to coat in the butter and oil. Cook for 5-7 minutes, stirring occasionally, until carrots start softening but still have a bit of bite and begin to turn a light golden color.
  4. Sprinkle 2 tablespoons packed brown sugar evenly over the carrots, along with 1 tablespoon fresh thyme leaves. Stir well to combine so the sugar starts melting and caramelizing around the carrots. Cook for another 5 minutes, stirring often to prevent burning.
  5. Add ¼ teaspoon salt and a pinch or two of freshly ground black pepper. Stir and taste, adjusting seasoning if needed. If the glaze seems too thick or sticky, add a splash of water or broth to loosen it slightly.
  6. Remove the pan from heat and, if desired, squeeze about 1 teaspoon fresh lemon juice over the carrots. Give one last gentle stir and transfer to a serving dish.
