  • 1/2 teaspoon lemon zest

Instructions

  1. Make the Herb Butter: In a small mixing bowl, combine 4 tablespoons softened unsalted butter with minced garlic, chopped rosemary, thyme leaves, and lemon zest. Mix thoroughly until all ingredients are evenly incorporated. Set aside to let flavors meld while you prepare the steak (about 5 minutes).
  2. Prepare the Steak: Pat the ribeye steak dry with paper towels to remove excess moisture. Season both sides generously with kosher salt and freshly ground black pepper. Let it sit at room temperature for 20 minutes before cooking.
  3. Preheat the Skillet: Place your cast iron skillet over medium-high heat and add 1 tablespoon olive oil. Allow the oil to shimmer but not smoke.
  4. Sear the Steak: Carefully lay the steak in the hot skillet. Don’t move it for about 3-4 minutes to develop a crust. Flip and sear the other side another 3-4 minutes for medium-rare (adjust time depending on thickness and desired doneness). Use a meat thermometer to check for 130°F (54°C) for medium-rare.
  5. Add Herb Butter: Reduce heat to medium-low. Spoon generous dollops of the prepared herb butter over the steak as it finishes cooking. Tilt the pan slightly and baste the steak repeatedly for about 2 minutes.
  6. Rest the Steak: Transfer the steak to a plate and tent loosely with foil. Let it rest for at least 5 minutes to allow juices to redistribute.
  7. Serve: Slice against the grain and spoon any remaining herb butter from the pan over the top. Serve immediately.
