  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup (240 ml) beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 2 tbsp butter
  • Salt and black pepper to taste
  • 46 soft sandwich buns (brioche or hamburger buns recommended)
  • Optional toppings: Swiss cheese slices, fresh thyme leaves, crispy fried onions

Instructions

  1. Slice 2 large yellow onions thinly (about 1/8 inch or 3 mm thick).
  2. Heat 2 tablespoons of butter in a skillet over medium-low heat. Add sliced onions and a pinch of salt. Stir frequently and caramelize onions until soft and golden, about 15-20 minutes. Add a splash of water or beef broth if onions start sticking.
  3. Push onions to the side of the pan, increase heat to medium-high, add ground beef. Break up beef and cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.
  4. Stir in minced garlic and tomato paste. Cook for 1-2 minutes until fragrant and tomato paste darkens.
  5. Pour in beef broth, Worcestershire sauce, Dijon mustard, and brown sugar. Stir to combine and scrape browned bits from pan. Reduce heat to low and simmer gently for 10 minutes, stirring occasionally until sauce thickens.
  6. Season with salt and black pepper to taste.
  7. Lightly toast buns in a dry pan or toaster oven until golden and crisp on edges.
  8. Spoon beef mixture onto buns and top with optional Swiss cheese or crispy fried onions if desired.
  9. Serve warm immediately.

Notes

Caramelize onions slowly over low to medium heat to avoid burning and achieve deep sweetness. Drain excess fat from beef but leave a little for flavor. Toast buns to prevent sogginess. Adjust sauce thickness by adding broth or simmering longer. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, skip cheese or use dairy-free substitutes.
