  • 2 pounds turkey gizzards, cleaned and trimmed
  • Duck fat or olive oil (enough to fully submerge the gizzards)
  • 46 garlic cloves, peeled and smashed
  • A few sprigs of fresh thyme
  • 2 bay leaves
  • 1 teaspoon black peppercorns, whole
  • 45 large shallots, thinly sliced
  • 2 tablespoons flour (for dredging the shallots)
  • Salt, to taste
  • Vegetable oil (for frying the shallots)

Instructions

  1. Clean the turkey gizzards by trimming excess fat or gristle and rinsing thoroughly under cold water. Pat dry with paper towels.
  2. Place the gizzards in a heavy-bottomed pot or Dutch oven and cover them completely with duck fat or olive oil.
  3. Add garlic cloves, thyme sprigs, bay leaves, and black peppercorns. Season with a pinch of salt.
  4. Heat the pot over low heat until the oil reaches a gentle simmer. Cook the gizzards for 2-3 hours, or until fork-tender.
  5. Carefully remove the gizzards with a slotted spoon and let them cool slightly.
  6. Strain the cooking fat and store it for future use.
  7. Heat vegetable oil in a saucepan to about 350°F (175°C).
  8. Toss the sliced shallots with flour in a small bowl to coat them evenly.
  9. Fry the shallots in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels and sprinkle with a pinch of salt.
  10. Serve the turkey gizzards warm, topped generously with crispy shallots.
