  • 12 ounces wide egg noodles
  • 4 cups low-sodium beef broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme
  • 2 medium carrots, sliced (optional)
  • 2 stalks celery, chopped (optional)

Instructions

  1. Trim excess fat from the chuck roast and cut into 2-inch chunks. Pat dry with paper towels.
  2. Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown beef chunks in batches, about 3-4 minutes per side. Transfer browned beef to the slow cooker.
  3. In the same skillet, sauté diced onion, minced garlic, sliced carrots, and chopped celery until softened, about 5 minutes. Transfer to the slow cooker.
  4. Melt remaining 1 tablespoon butter in skillet. Stir in flour and cook 1-2 minutes to form a roux. Gradually whisk in beef broth, scraping browned bits, and cook until slightly thickened, about 3-4 minutes. Pour into slow cooker.
  5. Add Worcestershire sauce, salt, black pepper, and dried thyme to slow cooker. Stir gently to combine.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender and vegetables are soft.
  7. About 30 minutes before serving, cook egg noodles in boiling salted water according to package instructions (6-8 minutes). Drain and set aside.
  8. Gently fold cooked noodles into slow cooker. Heat on warm for 5-10 minutes to allow noodles to soak up sauce.
  9. Adjust seasoning with salt and pepper if needed. Serve hot, optionally garnished with fresh parsley.

Notes

Brown the beef well to develop deep flavor. Cook noodles separately and add near the end to prevent mushiness. If gravy is too thin, thicken with cornstarch slurry and cook on high for 15 minutes. For gluten-free, use gluten-free flour and pasta. Butter can be substituted with olive oil for dairy-free version.
