  • 2 lbs fresh collard greens, washed, stems removed, and leaves roughly chopped
  • 2 medium smoked ham hocks (about 1.5 lbs total)
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 4 cups chicken broth or stock (low sodium preferred)
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter

Instructions

  1. Wash collard greens thoroughly in a large bowl of cold water. Remove tough stems and chop leaves into bite-sized pieces. Drain well.
  2. Place chopped collard greens in the bottom of a 6-quart slow cooker. Sprinkle chopped onion and minced garlic over the top.
  3. Nestle smoked ham hocks into the greens, pushing them down so they’re mostly covered.
  4. Add chicken broth, apple cider vinegar, and brown sugar. Sprinkle in crushed red pepper flakes (if using), salt, and black pepper. Stir gently to mix.
  5. Cover and cook on low for 7-8 hours or high for 3.5-4 hours. Stir halfway through cooking.
  6. Once done, remove ham hocks with tongs or a slotted spoon. Let cool slightly, then shred meat, discarding fat and bones. Return shredded meat to the slow cooker and stir into the greens.
  7. Stir in butter for richness. Taste and adjust salt or pepper as needed.
  8. Serve hot, making sure each bowl has plenty of greens, ham, and broth. Enjoy with cornbread or rice.

Notes

For vegetarian adaptation, skip ham hocks and use smoked paprika or liquid smoke. Smoked turkey legs can be substituted for a lighter version. If greens taste bitter, add more vinegar or sugar. Prep ingredients the night before for easy morning assembly. Leftovers improve in flavor after a day and freeze well for up to 3 months.
