  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226 g) unsalted butter, softened
  • ¾ cup packed (150 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup (about 120 g) rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt.
  3. In a large bowl, beat the softened unsalted butter with brown sugar and granulated sugar until fluffy and pale, about 3–4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and glossy.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined to avoid overmixing.
  6. Gently fold in the rainbow sprinkles with a rubber spatula, careful not to crush them or let the colors bleed.
  7. Scoop dough onto prepared baking sheets using a tablespoon or cookie scoop, spacing about 2 inches apart.
  8. Bake for 10–12 minutes until edges are set but centers still look slightly soft; they will firm up while cooling.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, keep butter at room temperature (soft but not melted). Gently fold in sprinkles to prevent color bleeding. If dough is too soft, chill for 15–30 minutes before baking. Pull cookies out when edges are set but centers are slightly underdone for perfect chewiness. Store in airtight container at room temperature up to 5 days or freeze up to 3 months.
