Sweet Potato Nori Rolls with Spicy Mayo

These Sweet Potato Nori Rolls combine the nutty sweetness of roasted sweet potato with the creamy heat of spicy mayo, fresh veggies, and umami-packed nori sheets for a delicious and healthy meal.

  • 2 medium-sized sweet potatoes, peeled and cut into thin strips
  • 4 nori sheets
  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Pinch of salt
  • 1 cucumber, sliced into thin matchsticks
  • 1 avocado, sliced or mashed
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup mayonnaise (regular or vegan)
  • 12 tablespoons sriracha
  • Soy sauce for dipping

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the sweet potato strips on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt. Roast for 20-25 minutes, turning halfway through, until tender and slightly caramelized.
  2. Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to package instructions, either in a rice cooker or on the stovetop. Once cooked, transfer to a bowl and mix in 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and a pinch of salt. Let it cool.
  3. Slice the cucumber into thin matchsticks and the avocado into thin slices. Set aside.
  4. In a small bowl, combine 1/4 cup mayonnaise with 1-2 tablespoons of sriracha (adjust to taste). Mix until smooth.
  5. Place a nori sheet shiny side down on a bamboo sushi mat. Spread a thin, even layer of sushi rice over the nori, leaving about 1 inch (2.5 cm) at the top edge to seal the roll.
  6. Arrange roasted sweet potato strips, cucumber, and avocado slices horizontally across the center of the rice.
  7. Using the sushi mat, carefully roll the nori sheet tightly from the bottom edge to the top, pressing gently to seal.
  8. Use a sharp knife to slice the roll into bite-sized pieces. Sprinkle with toasted sesame seeds and serve with spicy mayo and soy sauce for dipping.
