Instructions

  1. Prepare the saltwater soak: Dissolve 1 tablespoon kosher salt into 4 cups lukewarm water in a large bowl. Soak chicken breasts for 15-20 minutes.
  2. Pat dry and season: Remove chicken from soak and pat completely dry with paper towels. Brush each breast with 1 tablespoon olive oil, then season with black pepper, garlic powder, and paprika. Optionally, squeeze lemon juice over the top.
  3. Cook the chicken: Heat skillet over medium heat until a drop of water sizzles but doesn’t evaporate instantly (about 3-4 minutes). Add a small drizzle of olive oil to coat the pan. Place chicken breasts without crowding. Cook undisturbed for 5-6 minutes on the first side until golden crust forms. Flip and cook another 5-6 minutes until internal temperature reaches 160°F (71°C) or juices run clear.
